But we stuck with it, having the same lunch and dinner as the first day, but with a different breakfast smoothie (Mango Coconut Water...it had a dash of Cayenne, which I didn't like, but Mike did).

Today is Day #3, and we're planning to go down to CT, so we'll just take our dinner with us, and eat it while everyone else is having pizza....
Today's breakfast, however, was really good! I think it's my favorite smoothie yet! I was skeptical at first, because it called for Kale and Parsley, but it was delish. Fresh, light, just the right amount of sweetness to overcome the veggie tastes...perfect!
Green Smoothie: (makes 2 servings)
1 c. firmly packed chopped kale, stems removed
1 banana
1 Granny Smith apple
1/2 c. loosely packed flat-leaf parsley
2 1/4 c. water
Add all ingredients to blender and blend til smooth. MMM!
The other nice thing about it, is that the ingredients are cheap. Some of the other smoothies call for more expensive ingredients, like pomegranate juice and carrot juice and berries...
Well, that's it for now. We'll see how the rest of the week goes--I'm already looking forward to next week when we can eat beans and seafood!
Update @ 10:30pm
We went down to CT with a big bowl of Apple Sweet Potato Celery salad, which would be our lunch & dinner. it was fun (although tough to pass up the bowls of M&Ms, shrimp cocktail, and pizza!) and the salad was delicious! We loved the combination of flavors, and the raw sweet potato tasted a lot like carrots, and not like raw potato at all. I would definitely make it again!
Wow! I am getting hungry reading this. . . But for all the prohibited foods!
